My family LOVES appetizers. I love to take a regular appetizer and make something new with it. This is a take on a regular bacon wrapped jalapeo popper that looks a little more neat and pretty for that family get together or holiday party. Also, using the crescent rolls and potatoes makes for a more filling appetizer that you can dip into something yummy, your family will definitely approve!
145 per serving
- 2 cup potatoes, mashed
- 8 ounces cream cheese, garlic & chive
- 1 pounds bacon, chopped & cooked
- 2 jalapeos, diced
- cup white aged cheddar, shredded
- 2 tubes crescent sheets
Boil and mash 2 large potatoes to create 2 cups mashed.
Mix in cream cheese with mashed potatoes, let cool and set aside.
Chop 1 lb of bacon and cook in pan until crisp. Let soak on paper towels and set aside.
Dice 1-2 jalapeos, set aside.
Roll out crescent sheets. Spread potato mixture evenly over both sheets. Top evenly with bacon, jalapeos and cheese.
Preheat oven to 350. Take the longest side and start to roll up tightly. Slice into about 1/2in pinwheels and place on baking sheets. Should give you about 24.
Bake 20-25 minutes or until they turn lightly golden. Feel free to dip in ranch or a buttery garlic sauce!
